PEG'S GLORIFIED HAM AND EGGS, LEMMON VALLEY
Optimizing Restaurant Function – The floor plans for Peg’s Glorified Ham and Eggs restaurants are designed to enhance “Egg-cellent” Service. Lepori Construction designers captured work flow in a circular placement of stations, equipment and furnishings in our first two restaurants for Peg’s. The circular flow design fit easily into a building envelope that was about as wide as it was deep. However, our third restaurant, which is in Lemmon Valley, provided the challenge of designing in a long, narrow envelope. We learned from the “Egg-cellent” Staff how to adapt their movements into the floorplan to ensure that met their egg-acting standards.
Delivery – In addition to full design services, the Lepori team completed site tie-ins, framing, and finishes. We built all of the custom cabinetry in our shop, which allowed us to really shoe-horn all the function into spaces.
